Dark Valrhona Chocolate Mousse

With the richest dark chocolate, these mousses are for the discerning palette. Rich, creamy and light – the best way to round off any night with friends.

Instructions:

Step 1

Melt the chocolate and cream over a bain marie.

Step 2

Whisk the egg whites in a separate bowl.

Step 3

Once the chocolate has mlted and cooled slightly, stir in the egg yolks which have been mixed with the sugar.

Step 4

Now fold in the egg whites. Pour into dishes and place in the fridge to chill.

  • 200g Dark Valrhona chocolate
  • 200g Graham’s double cream
  • 170g sugar
  • 3 free range egg yolks
  • 3 free range egg whites
