Quark Quiche Lorraine
Great enjoyed hot or cold, this quiche recipe is sure to be loved by all the family.
Any number of fillings can be used but the mature cheddar combined with new potato makes for a delicious filling meal!

Since opening our first café in Quarriers Village, we have noticed a huge increase in the number of customers choosing not to eat wheat, either because of lifestyle or allergy. We developed our tortilla recipe as an alternative to quiche.
Preheat the oven to 160 degrees.
Fry onion and garlic, for 5-10 mins on a gentle heat, until soft. Add potatoes and dill.
Whisk eggs and cream and season with salt and pepper.
Add the potatoes and onion to the eggs, mixing gently to avoid breaking up the potatoes too much. Finally add the cheddar and stir gently again.
In an oven proof, large, non stick pan heat the oil over a medium hob heat, and add the egg mix, top with spring onions. Cook on a low heat for 5 minutes on the hob.
Transfer to the oven to bake for for 20 mins at 160 or until eggs are just cooked with very little wobble.
Allow to cool a little, then serve in wedges.
