Tzatziki Dip with Quark

The true test of great Greek cuisine is looking at the plate and thinking, “Smashing”. This refreshing but moreish dip is certainly that.

Instructions:

Step 1

Crush and chop a clove of garlic. Finely chop a red onion and chilli and add to the garlic.

Step 2

Peel and half a cucumber and use a small teaspoon to remove the seeds from the middle. Optional: you can salt the cucumber and set aside
for 15 minutes and then rinse if you want the cucumber to be firm.

Grate the cucumber on a course grater and add to the mix with roughly chopped coriander and the quark.

Step 3

Season with salt and pepper and serve.

  • 250g tub of Graham’s Natural Quark
  • Clove of garlic or more if you wish
  • Red or green chilli
  • Red onion
  • Cucumber
  • Coriander
